Dear members,
I would like to define what is the tissue involved in the composition of the
engawa. This is the outermost part of fillets, at he base of the ventral
and dorsal fins, in some flatfishes. Some findings on WWW referred to
muscle, other ones to gristle. This part is fragile, fleshy and it is named
"dentelle" in French. So, your help should be really appreciated.
