Fernando,
As several colleagues stated, juvenile is a term used to define a
ontogentic stage, where fish have reached their adult morphology
(although the proportions may still change), e.g. the fish has left the
larval stages.
Immature refers to a fish, which has not yet reached the reprodutive
stage. I don't think it can be applied to fish outside the reprodutive
season, e.g. cyprinids in winter without ripe gonads are not "immature".
