Hello Bill,
Chum salmon is definitely NOT endangered in Canada. In fact, it is
rather abundant. NOAA is a USA agency, and chum salmon are rare in the US,
as they have a more northern distribution.
I'd say eat your chum with a clean conscience (and some good wine)!

My wife showed up with a surprising package that claims to be smoked wild
chum salmon (Oncorynchus keta) from Canada. Since it is rare to see smoked
wild salmon, especially here in Portugal, I checked the NOAA website and see
that this species is listed as endangered. Can anyone provide some
background information on this?
