Many studies have been carried out on prehistoric fish bone assemblages all over the word - presumably you are looking for hunter-gatherer cultures of the mesolithic?
Richard G Cooke has undertaken many analyses in tropical regions so you may want to look up some of his literature. ( http://www.stri.org/english/research/bibliography/results.php?keyword=Cooke%2C+Richard )
